Ingredients
- For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices mozzarella cheese (optional)
- For the Bruschetta Topping:
- 3 medium ripe tomatoes, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh basil, chopped
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper, to taste
Instructions
- In a small bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Rub the mixture onto the chicken breasts. Let marinate for 15–30 minutes (optional).
- In another bowl, mix the diced tomatoes, garlic, basil, olive oil, and balsamic vinegar. Season with salt and pepper to taste. Set aside.
- Preheat grill to medium-high. Grill chicken 6–8 minutes per side, until internal temperature reaches 165°F.
- If using mozzarella, place a slice on each breast during the last 2 minutes of grilling.
- Let chicken rest for a few minutes after grilling, then top with the tomato mixture and serve.

- Use boneless thighs instead of breasts for extra juiciness.
- Add red onion, olives, or red pepper flakes for extra flavor.
- Drizzle balsamic glaze over the finished dish for a touch of sweetness.
