Description

Grilled Bruschetta Chicken is a light, healthy, and flavor-packed meal made with juicy grilled chicken breasts topped with a fresh tomato and basil bruschetta mixture. It’s a quick and easy weeknight dinner that captures all the brightness of summer in every bite.


Ingredients

  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices mozzarella cheese (optional)
  • For the Bruschetta Topping:
  • 3 medium ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Rub the mixture onto the chicken breasts. Let marinate for 15–30 minutes (optional).
  2. In another bowl, mix the diced tomatoes, garlic, basil, olive oil, and balsamic vinegar. Season with salt and pepper to taste. Set aside.
  3. Preheat grill to medium-high. Grill chicken 6–8 minutes per side, until internal temperature reaches 165°F.
  4. If using mozzarella, place a slice on each breast during the last 2 minutes of grilling.
  5. Let chicken rest for a few minutes after grilling, then top with the tomato mixture and serve.

Notes

  • Use boneless thighs instead of breasts for extra juiciness.
  • Add red onion, olives, or red pepper flakes for extra flavor.
  • Drizzle balsamic glaze over the finished dish for a touch of sweetness.
