Description
A light and healthy grilled chicken salad packed with fresh vegetables, tender grilled chicken breast, and a zesty dressing.
Ingredients
- 2 boneless, skinless chicken breasts (about 8 oz each)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup feta cheese, crumbled
- 2 tbsp balsamic vinaigrette (or dressing of choice)
Instructions
- Preheat the grill to medium-high heat.
- Brush chicken breasts with olive oil and season with salt, pepper, and garlic powder.
- Grill chicken for 6–8 minutes on each side, or until fully cooked and internal temperature reaches 165°F (74°C).
- Remove chicken from the grill and let rest for 5 minutes before slicing.
- In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
- Top the salad with sliced grilled chicken and crumbled feta cheese.
- Drizzle with balsamic vinaigrette and toss gently to combine.
- Serve immediately.

- Marinate chicken for extra flavor before grilling.
- Use any salad dressing you prefer.
- For a low-fat option, skip the cheese or use a lighter dressing.
