Description

A quick and flavorful ground beef and Brussels sprouts stir-fry that combines savory, spicy, and tangy elements for a delicious, hearty meal. Perfect for a weekday dinner, this recipe features caramelized Brussels sprouts cooked with seasoned ground beef and finished with a sweet chili lime sauce.

Ingredients

Beef Mixture

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sriracha (optional)

Vegetables and Sauce

  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 cup sweet chili sauce
  • 1/2 of a lime, juiced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the ground beef: Add the ground beef to a large skillet and crumble it as it cooks. Mix in the green onions and season with salt, pepper, garlic powder, sriracha (if using), and soy sauce. Cook until the beef is thoroughly browned and cooked through, then remove from the skillet and set aside on a plate.
  2. Sauté the Brussels sprouts: Pour a tablespoon of avocado oil into the same skillet. Add the shredded Brussels sprouts and season with salt and pepper. Sauté over medium heat until the sprouts are soft and caramelized, stirring occasionally to prevent burning.
  3. Combine beef and sauce: Return the cooked ground beef to the skillet with the Brussels sprouts. Pour in the sweet chili sauce and lime juice, stirring thoroughly to coat all the ingredients evenly with the sauce. Heat everything together until warmed through.
  4. Garnish and serve: Sprinkle sesame seeds over the top if desired. Serve the dish hot over steamed rice or your preferred side for a complete meal.

Notes

  • For added heat, increase the amount of sriracha or add red pepper flakes.
  • Shredded Brussels sprouts cook faster and caramelize better than whole or halved sprouts.
  • This dish pairs well with steamed jasmine or basmati rice.
  • You can substitute avocado oil with olive oil or another neutral oil.
  • For a lower-sodium version, use reduced-sodium soy sauce and sweet chili sauce.
