Ingredients
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp taco seasoning (chili powder, cumin, paprika, garlic powder, salt)
- 2 tbsp tomato sauce
- 1/4 cup water
- 2 cups cooked rice or cauliflower rice
- 1 can black beans, drained and rinsed
- 1 cup sweet corn (frozen or canned)
- 2 cups romaine lettuce or mixed greens
- 1 cup cherry tomatoes or diced bell peppers
- 1 avocado or 1/2 cup guacamole
- 1/2 cup shredded cheese (cheddar, cotija, or Mexican blend)
- 1/4 cup creamy dressing (Greek yogurt-based or lime crema)
- Fresh cilantro and lime wedges for garnish
Instructions
- Heat olive oil in a pan over medium heat. Cook diced onion and garlic until fragrant.
- Add ground turkey and cook until browned.
- Stir in taco seasoning, tomato sauce, and water. Simmer until thickened.
- Prepare rice or cauliflower rice and mix with lime juice and chopped cilantro if desired.
- In bowls, layer rice, greens, cooked turkey, beans, corn, tomatoes, cheese, and avocado.
- Drizzle with creamy dressing and top with cilantro and lime wedges.
