Description

This Healthy Turkey Taco Bowl is a quick, nutritious, and flavorful meal packed with lean protein, fiber-rich veggies, and a creamy sauce. Perfect for dinner or meal prep.


Ingredients

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning (chili powder, cumin, paprika, garlic powder, salt)
  • 2 tbsp tomato sauce
  • 1/4 cup water
  • 2 cups cooked rice or cauliflower rice
  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn (frozen or canned)
  • 2 cups romaine lettuce or mixed greens
  • 1 cup cherry tomatoes or diced bell peppers
  • 1 avocado or 1/2 cup guacamole
  • 1/2 cup shredded cheese (cheddar, cotija, or Mexican blend)
  • 1/4 cup creamy dressing (Greek yogurt-based or lime crema)
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Heat olive oil in a pan over medium heat. Cook diced onion and garlic until fragrant.
  2. Add ground turkey and cook until browned.
  3. Stir in taco seasoning, tomato sauce, and water. Simmer until thickened.
  4. Prepare rice or cauliflower rice and mix with lime juice and chopped cilantro if desired.
  5. In bowls, layer rice, greens, cooked turkey, beans, corn, tomatoes, cheese, and avocado.
  6. Drizzle with creamy dressing and top with cilantro and lime wedges.
