Description

A refreshing, high‑protein frozen bark inspired by key lime pie—creamy Greek yogurt mixed with protein powder and zesty lime, topped with crunchy graham crumbs and coconut, then frozen into bark pieces.


Ingredients

  • 2½ cups plain Greek yogurt (non‑fat or low‑fat; can substitute dairy‑free)
  • 3½ tbsp key lime juice
  • 2 tbsp powdered Swerve (or substitute 1 tbsp honey or maple syrup)
  • 1 tsp vanilla extract
  • 1 tbsp lime zest
  • ⅓ cup crushed (gluten‑free) graham crackers
  • ¼ cup toasted unsweetened coconut flakes
  • 1 scoop vanilla protein powder (regular or dairy‑free)

Instructions

  1. In a medium bowl, combine Greek yogurt, key lime juice, protein powder, powdered Swerve (or chosen sweetener), vanilla extract, and lime zest. Mix until smooth.
  2. Line a baking sheet with parchment paper or silicone mat. Spread the yogurt mixture into a thin, even layer.
  3. Sprinkle crushed graham crackers, toasted coconut flakes, and additional lime zest evenly over the top.
  4. Freeze for at least 2–3 hours, or until fully set.
  5. Once frozen, remove from freezer, lift the parchment or mat, and break into bark pieces.
  6. Enjoy immediately or store in an airtight container in the freezer (up to 2 weeks), layering pieces with parchment to prevent sticking.
