These Holiday Cake Mix Cookie Bars are soft, chewy, and festive, made with a cake mix base and a one-bowl, one-pan method—perfect for holiday gatherings or cozy nights in.
Ingredients
- 1 box holiday-flavored cake mix (vanilla or funfetti variety)
- 1/2 cup softened butter or 1/2 cup oil
- 2 large eggs
- 1/4 cup brown sugar
- 1/2 cup festive sprinkles (optional)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9x13 inch baking pan with parchment paper.
- In a large bowl, mix together cake mix, softened butter or oil, eggs, brown sugar, and vanilla extract until well combined.
- Fold in festive sprinkles if using.
- Spread the dough evenly into the prepared baking pan.
- Bake for 20–25 minutes, or until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the bars to cool completely in the pan before slicing into squares.
Notes
- Store in an airtight container at room temperature for up to 4 days.
- Freeze for up to 3 months in a sealed freezer bag.
- Reheat individual bars in the microwave for about 10 seconds to soften.
- For a richer flavor, add chocolate drizzle or chopped nuts.
