Description

Homemade marshmallow fluff is a sweet, creamy spread with a light and airy texture, perfect for baking, filling, or snacking straight from the spoon.


Ingredients

  • 3/4 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine corn syrup, granulated sugar, water, and salt in a saucepan over medium heat. Stir until the sugar dissolves, then boil until the mixture reaches 240°F on a candy thermometer.
  2. While the syrup cooks, whip the egg whites and cream of tartar in a stand mixer until soft peaks form.
  3. Slowly pour the hot syrup into the egg whites while mixing on low speed, being careful to pour along the side of the bowl.
  4. Increase the mixer speed to high and whip until the mixture is glossy and forms stiff peaks.
  5. Add vanilla extract and mix until fully incorporated.

Notes

  • Add almond or peppermint extract for flavor variations.
  • Fold in unsweetened cocoa powder for a chocolate version.
  • Reduce sugar slightly for a less sweet fluff.
  • Store in an airtight container in the refrigerator for up to 2 weeks.
  • Let it come to room temperature and whip by hand before reusing.
