Description
These honey garlic carrots are roasted to perfection with a glossy glaze made from browned butter, honey, and garlic. They're tender, slightly caramelized, and incredibly easy to make—a perfect side dish for any meal.
Ingredients
- 2 lb carrots, cut on the diagonal into 2–3 in pieces
- 5 Tbsp butter
- 4 garlic cloves, minced
- 2 Tbsp honey
- ¼ tsp salt (or to taste)
- ¼ tsp freshly ground black pepper
- Chopped fresh parsley, for garnish
Instructions
- Preheat oven to 425°F and lightly grease a rimmed baking sheet.
- In a small saucepan, melt butter over medium-low heat, add garlic, and cook for about 3 minutes until lightly golden. Remove from heat and whisk in honey.
- Toss carrot pieces in the warm glaze, season with salt and pepper, and spread in a single layer on the baking sheet.
- Roast for 22–25 minutes, stirring halfway through, until carrots are fork-tender and caramelized on the edges.
- Adjust seasoning, garnish with chopped parsley, and serve.
Notes
- Add ¼ tsp smoked paprika or a pinch of cayenne for a spiced variation.
- Roast with fresh thyme or rosemary for an herbal twist.
- Add orange juice or zest for a citrusy flavor.
- Mix in parsnips or sweet potato wedges for variety.
- Refrigerate leftovers for up to 4 days; reheat in a skillet with a dab of butter.
