Ingredients
Carrots & Seasoning
- 1 lb. carrots, washed & peeled
- 1 Tbsp honey (plus more for serving)
- 1 Tbsp olive oil
- 2 garlic cloves, minced
- ½ tsp dried dill (or 1 Tbsp chopped fresh dill)
- ¼ tsp salt
- Cracked black pepper, to taste

- ¼ cup feta cheese, crumbled
- Fresh dill, for garnish
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit and line a large baking pan with parchment paper to prevent sticking and facilitate even roasting.
- Prepare Carrots: Peel the carrots and slice off both ends. Cut the carrots on the bias into roughly 1½ inch pieces. If some pieces are large, slice them in half lengthwise to ensure even roasting. Place all pieces in a large mixing bowl.
- Toss with Seasonings: Add olive oil, honey, minced garlic, dried or fresh dill, salt, and cracked black pepper to the bowl. Toss thoroughly until all carrot pieces are fully coated with the mixture.
- Drain and Arrange: Using a slotted spoon, carefully remove the carrots from the bowl, leaving the liquid behind. Spread the carrots evenly on the prepared baking pan. Reserving the liquid enables better caramelization and crisping during roasting.
- Roast the Carrots: Place the pan in the preheated oven and roast for 20 to 25 minutes until the carrots become tender. During the last 5 to 10 minutes of roasting, baste the carrots with the reserved honey and seasoning liquid to add moisture and depth of flavor.
