Description

This Honeycrisp Apple Broccoli Salad is a fresh and flavorful side dish featuring crisp Honeycrisp apples, crunchy broccoli, and a creamy dressing made with Greek yogurt and honey. Ingredients

4 cups fresh broccoli florets

1 large Honeycrisp apple, diced

½ cup shredded carrots

⅓ cup dried cranberries

¼ cup sunflower seeds

¼ cup red onion, finely diced

⅓ cup plain Greek yogurt

⅓ cup mayonnaise

1½ Tbsp apple cider vinegar

1 Tbsp honey

Salt and pepper, to taste


Instructions

In a large mixing bowl, combine the broccoli, diced Honeycrisp apple, shredded carrots, dried cranberries, sunflower seeds, and red onion.

In a separate small bowl, whisk together Greek yogurt, mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth and creamy.

Pour the dressing over the salad ingredients and toss until evenly coated.

Refrigerate the salad for at least 20 minutes to allow the flavors to meld.

Toss the salad again before serving and enjoy!
