Ingredients
Salad Ingredients
- 2 Honeycrisp apples, cored and thinly sliced
- 4 oz feta cheese, crumbled
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 4 cups mixed greens
Dressing Ingredients
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Combine salad ingredients. In a large bowl, place the mixed greens, sliced Honeycrisp apples, crumbled feta cheese, chopped walnuts, and dried cranberries. Gently toss to evenly distribute all components.
- Prepare the dressing. In a separate small bowl, whisk together the olive oil, apple cider vinegar, and honey until the mixture is emulsified and smooth.
- Add the dressing to the salad. Pour the honey-apple cider vinegar dressing evenly over the salad mixture to coat all ingredients lightly.
- Toss the salad gently. Using salad tongs or forks, toss the salad gently to combine and ensure the dressing is well mixed with the salad without bruising the delicate greens.
- Season to taste. Sprinkle salt and freshly ground black pepper over the salad according to your preferred taste and give it one final gentle toss before serving.
Notes
- Use Honeycrisp apples for their crisp texture and balanced sweet-tart flavor, but other crisp apples like Fuji or Pink Lady can also work.
- For a nut-free version, omit walnuts or substitute with pumpkin seeds or sunflower seeds.
- Add a squeeze of lemon juice to the sliced apples to prevent browning if preparing ahead of time.
- Adjust the honey quantity in the dressing to taste depending on the sweetness of your apples or personal preference.
- This salad is best served fresh but can be chilled for up to 2 hours before serving.
