Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, well-drained
  • 1 cup powdered sugar
  • 23 tbsp pineapple juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Alternate adding the dry ingredients and sour cream, mixing until just combined.
  6. Gently fold in the crushed pineapple.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack.
  10. Mix powdered sugar and pineapple juice to make the glaze, then drizzle it over the cooled cake.
