Ingredients
- 2 ribeye or sirloin steaks (about 1 inch thick)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 tablespoon unsalted butter (for sauce)
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste (for sauce)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the steaks dry with paper towels and season generously with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat until hot.
- Sear the steaks for 3-4 minutes on each side for medium-rare or until the desired doneness is reached.
- Remove the steaks from the skillet and let them rest on a plate, tented with foil.
- Melt butter in the same skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream, stir to combine, and bring to a gentle simmer.
- Stir in grated Parmesan cheese and cook until the sauce thickens slightly.
- Season the sauce with salt and pepper to taste.
- Return the steaks to the skillet, spoon sauce over them, and warm through for 1-2 minutes.
- Serve the steaks topped with creamy garlic sauce and garnish with chopped parsley.
Notes
- Use a meat thermometer for perfect doneness.
- Letting the steak rest helps retain its juices.
- For a stronger garlic flavor, roast the garlic beforehand.
- Double the sauce if serving with pasta or bread.
