Ingredients

  • 1/4 cup key lime juice (or lime juice)
  • Zest of 2 key limes (or 1 regular lime)
  • 1/2 tsp matcha powder (optional, for color)


Instructions

  1. Prepare the chia pudding base: In a bowl, combine the chia seeds, almond milk, key lime zest, maple syrup, and vanilla extract. Whisk thoroughly for about 30 seconds until the mixture is well combined and the chia seeds are evenly distributed.
  2. Chill to set: Place the bowl in the refrigerator and allow the chia pudding to firm up for at least 2 hours or preferably overnight, so it attains a pudding-like consistency.
  3. Make the lime mousse: Drain the soaked cashews and place them into a blender or food processor along with the coconut milk, maple syrup, key lime juice, lime zest, and optional matcha powder. Blend until completely smooth and creamy, scraping down the sides as needed to ensure an even texture.
