Ingredients

Cake:

  • 1 box yellow cake mix (15.25 oz)

Lime Filling:

  • 1 cup key lime juice (bottled or fresh)
  • ¾ cup white sugar
  • 1 tablespoon cornstarch

Instructions

  1. Make the Cake: Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish. In a large bowl, combine the yellow cake mix, water, vegetable oil, and eggs. Beat the mixture for 2 minutes until smooth. Pour the batter into the prepared baking dish and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes.
  2. Poke Holes: Using the handle of a wooden spoon or a skewer, poke holes all over the cake about an inch apart to allow the lime filling to soak in thoroughly.
  3. Prepare the Lime Filling: In a saucepan over medium heat, whisk together the lime gelatin mix, key lime juice, sugar, and cornstarch.
