Description

This hearty lasagna soup brings all the cheesy, meaty goodness of traditional lasagna into a cozy, one-pot meal. Packed with bold Italian flavor, tender pasta, and melty cheese, it’s the perfect comfort food for busy weeknights or chilly evenings—quick, easy, and totally satisfying.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)
  • 8 lasagna noodles, broken into bite-sized pieces
  • ¾ cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese (plus more for topping)
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef or sausage and cook until browned. Drain excess fat.
  3. Stir in onion and garlic; sauté until soft and fragrant.
  4. Mix in tomato paste, crushed tomatoes, and broth. Add Italian seasoning, salt, pepper, and red pepper flakes.
  5. Bring to a boil, then reduce to a simmer. Stir in broken lasagna noodles.
  6. Simmer uncovered for 12–15 minutes, stirring occasionally, until noodles are tender.
  7. In a small bowl, mix ricotta with a pinch of salt and Parmesan cheese.
  8. Ladle soup into bowls. Top each with a dollop of ricotta mixture, a sprinkle of mozzarella, and extra Parmesan.
  9. Garnish with fresh basil or parsley and serve hot.
