Ingredients
- 1 tbsp olive oil
- 1 lb ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or beef broth
- 1 tsp Italian seasoning
- ¼ tsp crushed red pepper flakes (optional)
- 8 lasagna noodles, broken into bite-sized pieces
- ¾ cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese (plus more for topping)
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef or sausage and cook until browned. Drain excess fat.
- Stir in onion and garlic; sauté until soft and fragrant.
- Mix in tomato paste, crushed tomatoes, and broth. Add Italian seasoning, salt, pepper, and red pepper flakes.
- Bring to a boil, then reduce to a simmer. Stir in broken lasagna noodles.
- Simmer uncovered for 12–15 minutes, stirring occasionally, until noodles are tender.
- In a small bowl, mix ricotta with a pinch of salt and Parmesan cheese.
- Ladle soup into bowls. Top each with a dollop of ricotta mixture, a sprinkle of mozzarella, and extra Parmesan.
- Garnish with fresh basil or parsley and serve hot.
