Description

Lazy Day Salsa is a quick and flavorful salsa made with canned fire-roasted tomatoes and a few fresh ingredients. It’s perfect for dipping or topping and ready in just 5 minutes.


Ingredients

  • 1/4 medium white onion, peeled
  • 2 tablespoons diced jalapenos (from a can) or 1 medium fresh jalapeno, stem and seeds removed
  • 2 cloves garlic, peeled
  • 14.5 ounces fire-roasted diced tomatoes with garlic
  • 1/2 fresh lime, juiced
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh cilantro

Instructions

  1. Add the onion, jalapeno, and garlic to the bowl of a food processor. Pulse 5-6 times until the bits reach your desired size.
  2. Remove the cover and scrape down the sides of the bowl.
  3. Add the fire-roasted tomatoes, lime juice, salt, and cilantro to the processor.
  4. Pulse 1-2 more times to combine all ingredients.
  5. Transfer the salsa to a serving dish and serve immediately, or store in a pint-sized mason jar in the refrigerator.

Notes

  • For a milder salsa, remove the veins and seeds from the jalapeno.
  • For an even milder version, substitute jalapenos with 2 tablespoons of green chiles.
  • Salsa tastes better the next day as the flavors deepen.
  • Can be frozen for up to 6 months; thaw overnight in the refrigerator.
