Description

Lemon Ginger Chicken with Pineapple Mango Salsa is a vibrant and tropical dish combining tender, marinated chicken with a fresh, zesty fruit salsa. Perfect for warm weather and easy to prepare, it's a delightful balance of sweet, spicy, and savory flavors.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup pineapple, diced
  • 1 cup mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely diced
  • 2 tablespoons lime juice

Instructions

  1. In a bowl, whisk together lemon juice, grated ginger, minced garlic, olive oil, salt, and pepper to make the marinade.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  3. Meanwhile, prepare the salsa by combining diced pineapple, mango, red onion, cilantro, jalapeño, and lime juice in a bowl. Chill in the refrigerator.
  4. Grill, bake, or pan-sear the chicken until cooked through and golden brown.
  5. Let the chicken rest for a few minutes before slicing.
  6. Serve the chicken topped with the fresh pineapple mango salsa.

Notes

  • For extra flavor, marinate the chicken for up to 2 hours.
  • Use fresh fruit for the best salsa texture and taste.
  • Adjust jalapeño quantity for desired spice level.
  • Try substituting chicken with tofu or mushrooms for a vegan option.
