Ingredients
- 12 oz rotini pasta
- 1 lb ground beef
- 1/2 cup ranch dressing
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup sweet corn (frozen or fresh)
- 1/2 cup diced bell peppers
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- 1/2 cup breadcrumbs
- 2 tbsp melted butter
Instructions
- Cook rotini pasta according to package directions until al dente. Drain and set aside.
- In a skillet over medium heat, cook ground beef until browned. Season with garlic powder, onion powder, salt, and pepper. Drain excess grease.
- In a large bowl, mix ranch dressing, sour cream, cheddar cheese, corn, and bell peppers. Add cooked beef and pasta, and stir to combine.
- Transfer mixture to a greased baking dish.
- Mix breadcrumbs with melted butter, and sprinkle evenly over the casserole.
- Bake at 375°F (190°C) for 20 minutes or until bubbly and golden on top.
- Let cool slightly before serving.
