Ingredients
Snack Mix
- 1 cup Lucky Charms Cereal (marshmallows removed)
- 1 1/2 cups Lucky Charms Marshmallows
- 1 cup green chocolate covered candies (Sixlets or M&Ms)
- 1 1/2 cups mini pretzels
- 1 cup Rice Chex cereal
Coating
- 11 to 12 oz white chocolate chips
Instructions
- Combine dry ingredients: In a large mixing bowl, add the Lucky Charms cereal (without marshmallows), 3/4 cup of the Lucky Charms marshmallows, 3/4 cup of the green chocolate candies, mini pretzels, and Rice Chex cereal. Stir the mixture thoroughly to evenly distribute all the components.
- Melt white chocolate: Place the white chocolate chips in a medium, microwave-safe bowl. Microwave for 30 seconds, then stir. Continue microwaving in 30-second intervals, stirring after each, until the chocolate is mostly melted. If necessary, microwave in additional 15-second increments, stirring until smooth. Take care not to overheat the chocolate, as it can seize.
- Coat snack mix: Pour the melted white chocolate over the cereal mixture. Gently stir to coat all pieces evenly with the white chocolate.
- Set and decorate: Spread the coated mixture onto a cookie sheet lined with parchment paper or a silicone liner. Evenly sprinkle the remaining marshmallows and green chocolate candies over the top for added decoration and texture.
- Harden and serve: Allow the mixture to sit at room temperature until the white chocolate hardens completely. Once set, break into clusters or pieces and enjoy your sweet and salty Lucky Charms snack mix.
