Description

These Mediterranean Quesadillas are a quick and delicious twist on the classic quesadilla, blending fresh tomatoes, red onion, spinach, and a combination of feta and mozzarella cheeses for a flavorful Mediterranean-inspired snack or light meal. Ready in just 15 minutes, they are perfect for a wholesome, cheesy bite any time.


Ingredients

Filling

  • 1 diced tomato (grape/cherry tomatoes work best for a sweeter taste, or plum tomatoes)
  • 1/3 cup diced red onion
  • 1 cup chopped spinach
  • 1/2 cup feta cheese
  • 1 cup shredded mozzarella cheese

Other

  • 3 burrito style tortillas
  • 1-2 teaspoons oil (for cooking)


Instructions

  1. Prepare the filling: In a medium bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix well until all ingredients are evenly distributed.
  2. Assemble the quesadillas: Lay out each burrito-style tortilla and evenly spread about one-third of the filling mixture on one half of each tortilla. Carefully fold the tortilla in half to encase the filling.
  3. Cook the quesadillas: Heat a small amount of oil in a large flat pan or on a griddle over medium heat. Place each folded tortilla onto the pan and cook for 3-4 minutes per side. Press down gently with a spatula as they cook, until the tortillas are golden brown and crisp, and the cheeses inside have melted.
  4. Serve: Remove the quesadillas from the pan, let them cool slightly, then cut each into 4 slices. Serve warm with your favorite toppings, such as sour cream, salsa, or pico de gallo for added flavor.
