Description

A tender, juicy ground‑chicken loaf infused with garlic, Parmesan, Italian herbs, and a melty mozzarella finish—perfect for an easy and comforting dinner any night.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or seasoned)
  • 2 cloves minced garlic
  • 1 egg
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/4 cup chopped onion
  • Optional: 1 tsp Italian seasoning
  • Optional: 2 tbsp chopped fresh parsley
  • Optional: 1 tsp Worcestershire sauce
  • Optional topping: 1/2 cup shredded mozzarella cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375 °F (190 °C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, garlic, egg, milk, salt, pepper, and any optional ingredients. Mix until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. Drizzle or brush olive oil on top for a golden crust.
  5. Bake for about 45 minutes, or until internal temperature reaches 165 °F (74 °C).
  6. If using mozzarella, sprinkle it on top during the last 5 minutes of baking until melted and bubbly.
  7. Let the meatloaf rest for 5–10 minutes before slicing to retain juiciness.

  • Do not overmix the meat mixture to keep the meatloaf tender.
  • Use a meat thermometer to ensure it reaches 165 °F internally.
