Description

This Mexican casserole layers seasoned ground beef, beans, tortilla chips, sour cream, fresh vegetables, and melted cheese into a comforting and flavorful one-pan dish perfect for weeknights or gatherings.


Ingredients

  • 1 lb lean ground beef
  • 2 cups jarred salsa
  • 1 (16-oz) can chili beans, drained
  • 3 cups crushed tortilla chips
  • 2 cups sour cream
  • 1 (2-oz) can sliced black olives, drained
  • ½ cup chopped green onion
  • ½ cup chopped fresh tomato
  • 2 cups shredded Cheddar cheese

Instructions

  1. Preheat oven to 350 °F (175 °C) and lightly spray a 9×13" baking dish.
  2. In a skillet over medium-high heat, brown the ground beef until crumbly, about 8–10 minutes.
  3. Stir in the salsa and simmer until thickened, about 20 minutes.
  4. Mix in the drained chili beans and cook until heated through.
  5. Layer the crushed tortilla chips in the prepared baking dish.
  6. Spoon the beef and bean mixture over the chips.
  7. Spread the sour cream evenly on top.
  8. Sprinkle with black olives, green onions, and chopped tomatoes.
  9. Top with shredded Cheddar cheese.
  10. Bake for about 30 minutes, or until bubbly.
  11. Let the casserole rest for 5 minutes before serving.
