A rich and indulgent Mint Chocolate Cheesecake Cake that features layers of moist chocolate cake and a creamy mint cheesecake center, topped with ganache or mint frosting. Perfect for special occasions or as a luxurious treat.
Ingredients
- 16 oz cream cheese
- 3/4 cup granulated sugar
- 3 large eggs (divided)
- 1 tsp mint extract
- Green food coloring (optional)
- 1 cup semi-sweet chocolate chips
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot water
- 1 cup heavy cream (for ganache or frosting)
- 1 cup powdered sugar (if making frosting)
Instructions
- Preheat the oven to 325°F (163°C). Grease a springform pan and two 9-inch round cake pans.
- For the cheesecake layer: Beat cream cheese until smooth, then add sugar, 1 egg, mint extract, and green food coloring (if using). Mix until smooth and pour into the springform pan. Bake for 40-45 minutes or until set. Cool completely and chill.
- For the chocolate cake: In a large bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine buttermilk, oil, 2 eggs, and vanilla. Gradually mix into dry ingredients, then add hot water and stir until smooth.
- Divide batter between prepared cake pans and bake at 350°F (177°C) for 30-35 minutes. Cool layers completely.
- To assemble: Place one cake layer on a serving plate, top with the cheesecake layer, then the second cake layer.
- For the ganache or frosting: Heat heavy cream and pour over chocolate chips. Let sit, then stir until smooth. Optionally, whip with powdered sugar for frosting. Spread over the cake.
Notes
- Use a water bath for baking the cheesecake to prevent cracking.
- Let the cake sit at room temperature before serving for best texture and flavor.
- Can be made a day ahead for enhanced flavor.
