Ingredients
- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups old-fashioned rolled oats
- 1/2 cup mini chocolate chips
- 1/2 cup M&Ms (or other candy-coated chocolates)
- 1/4 cup ground flaxseed (optional for added nutrition)
Instructions
- In a large mixing bowl, combine peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
- Add oats, mini chocolate chips, and M&Ms, stirring until fully combined. If using flaxseed, add it in now.
- Scoop small portions of the mixture and roll them into 1-inch balls using your hands.
- Place the balls on a parchment-lined baking sheet or plate.
- Chill the cookie balls in the refrigerator for at least 30 minutes to set.

- Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
