Description

A refreshing, no-bake dessert combining creamy cottage cheese, tropical fruits, and coconut for a light yet satisfying treat perfect for warm days or lazy evenings.


Ingredients

  • 1 1/2 cups cottage cheese
  • 1 cup coconut milk or coconut cream
  • 23 tablespoons honey or maple syrup (optional)
  • 2 tablespoons chia seeds
  • 1/2 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup mango pieces (fresh or thawed)
  • 2 tablespoons shredded coconut (unsweetened or lightly sweetened)
  • 1 tablespoon lime juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Blend cottage cheese, coconut milk, honey or maple syrup, lime juice, vanilla extract, and a pinch of salt until smooth and creamy.
  2. Stir in chia seeds and let rest for 10–15 minutes to thicken slightly.
  3. Fold in pineapple and mango chunks gently.
  4. Transfer mixture to serving bowls or jars and refrigerate for at least 2 hours until set.
  5. Before serving, top with shredded coconut and optional extra fruit.
