Description

A simple and flavorful recipe for oven-baked chicken breasts or thighs marinated in a zesty blend of olive oil, citrus juices, garlic, and Italian seasoning. This method ensures juicy, tender chicken with a perfectly seasoned crust, ideal for a wholesome family meal.


Ingredients

Marinade

  • 2 tablespoons olive oil
  • Juice from 1 orange
  • Juice from 1 lemon
  • 1 1/2 teaspoons Italian seasoning (divided)
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon paprika (or smoked paprika)
  • 3 cloves fresh garlic, minced

  • 1.5 lbs chicken breasts and/or thighs (bone-in and skin on)


Instructions

  1. Prepare the Marinade: In a large bowl or ziplock bag, combine olive oil, orange juice, lemon juice, 1 teaspoon Italian seasoning, salt, pepper, paprika, and minced garlic. Mix well to create a flavorful marinade.
  2. Marinate the Chicken: Add the bone-in, skin-on chicken breasts and/or thighs to the marinade. Toss to coat each piece thoroughly. Cover the bowl or seal the bag and refrigerate for 1 hour. You may marinate up to 6 hours, but avoid longer to prevent texture changes.
  3. Preheat the Oven: When ready to cook, set your oven to 375°F (190°C). Line a baking pan with parchment paper for easy cleanup. Arrange the chicken pieces bone-side down with some space between them to allow even cooking.
  4. Season the Chicken: Spoon any remaining marinade over the chicken pieces, then sprinkle with the remaining 1/2 teaspoon of Italian seasoning, plus additional salt and pepper to taste for enhanced seasoning.
  5. Bake the Chicken: Place the baking pan in the oven and bake for 45 to 55 minutes. Chicken breasts are cooked when they reach an internal temperature of 165°F (74°C). Thighs can be served at 165°F, but cooking them to 175-190°F brings optimal tenderness and flavor.
  6. Rest Before Serving: Remove the chicken from the oven and loosely cover with foil. Let rest for 5 minutes to allow the juices to redistribute, ensuring moist and tender pieces. Serve warm and enjoy your perfectly baked chicken.
