Description

Oven Fried Potatoes & Onions is a rustic, comforting dish where golden roasted potatoes meet sweet, tender onions for a hearty, flavorful bite.

Ingredients

  • 5 pounds red potatoes, thinly sliced or cubed
  • 1 large onion, finely chopped
  • ½ cup butter, diced
  • Salt and pepper to taste
  • Optional: drizzle of olive oil for added crispiness

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9×13 inch casserole dish.
  2. Spread the potatoes evenly in the dish.
  3. Scatter the chopped onion over the potatoes.
  4. Dot the surface with butter and season with salt and pepper.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Uncover, gently stir the potatoes, and place under the broiler.
  7. Broil for 5–7 minutes, stirring occasionally, until the top is crisp and golden.
  8. Serve hot and enjoy.

  • Bell peppers or mushrooms can be added before baking.
  • Fresh herbs like thyme or parsley add a fresh finish.
