Ingredients
- 5 pounds red potatoes, thinly sliced or cubed
- 1 large onion, finely chopped
- ½ cup butter, diced
- Salt and pepper to taste
- Optional: drizzle of olive oil for added crispiness
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a 9×13 inch casserole dish.
- Spread the potatoes evenly in the dish.
- Scatter the chopped onion over the potatoes.
- Dot the surface with butter and season with salt and pepper.
- Cover with aluminum foil and bake for 45 minutes.
- Uncover, gently stir the potatoes, and place under the broiler.
- Broil for 5–7 minutes, stirring occasionally, until the top is crisp and golden.
- Serve hot and enjoy.
