Description

These Peanut Butter Caramel Toffee Chocolate Chip Cookie Bars are gooey, rich, and packed with indulgent layers of flavor. With a soft peanut butter cookie base, melty chocolate chips, crunchy toffee bits, and a luscious swirl of caramel, these easy dessert bars are perfect for parties, bake sales, or whenever you’re craving something sweet and decadent.

Ingredients

  • ½ cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup semi-sweet chocolate chips
  • ¾ cup toffee bits
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper.
  2. Cream together the softened butter, peanut butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then mix in vanilla.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
  5. Fold in chocolate chips and toffee bits.
  6. Press half of the dough into the prepared pan. Drizzle caramel sauce over the dough.
  7. Drop spoonfuls of the remaining dough over the top and gently spread to cover the caramel.
  8. Bake for 25–30 minutes, or until golden and center is just set.
  9. Let cool completely before slicing for clean bars.

Notes

  • Use crunchy peanut butter for added texture.
  • Swap in dark chocolate chips or add chopped pecans for variety.
  • Want to tone down the sweetness? Omit the caramel and use just the toffee and chocolate chips.
  • Bars freeze well—wrap individually and store in freezer-safe bags.
  • Warm slightly in the microwave to bring back gooey texture.
