Instructions

  1. Brown the Ground Beef: Add the ground beef to a large cast iron skillet over medium-high heat. Cook until a deep brown crust develops on the meat before breaking it apart, stirring occasionally until about half the beef has a dark crust.
  2. Sauté Vegetables: Remove the beef from the skillet, leaving the fat behind. Add butter to the skillet, then add diced onions, green bell peppers, and minced mushrooms. Let them brown undisturbed for 1-2 minutes, stir, then brown for another 1-2 minutes before stirring again to develop flavor.
  3. Combine Beef and Veggies: Add the browned beef back into the skillet with the sautéed vegetables. Stir to combine evenly.
  4. Prepare Sauce Mixture: In a small cup, mix the beef broth and cornstarch until smooth to create a slurry.
  5. Add Sauces and Seasonings: Pour ketchup, Worcestershire sauce, Kosher salt, black pepper, and the beef broth-cornstarch mixture into the skillet. Stir everything together and cook until most of the liquid has thickened and only about 25% of the mixture remains liquid, approximately 3-5 minutes.
  6. Add the Cheese: Turn off the heat and fold in half of the chopped provolone cheese. Add more cheese gradually, stirring, until the mixture reaches your preferred cheesiness.
  7. Assemble Sandwiches: Serve the cheesy beef mixture on toasted brioche hamburger buns immediately for best flavor and texture.
