Description

Ingredients

Crust

  • 1 cup all-purpose flour

Cream Cheese Layer

  • 1 cup whipped topping

Pudding Layer

  • 2 packages instant pistachio pudding mix
  • 3 cups milk

Topping

  • 2 cups whipped topping
  • 1/2 cup toasted almonds (optional, but recommended)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crust.
  2. Prepare Crust Mixture: In a large bowl, combine the flour and the cut-up butter. Use a pastry blender or two knives to cut the butter into the flour until the mixture resembles small peas.
  3. Add Walnuts: Stir the chopped walnuts into the crust mixture evenly.
  4. Press into Pan: Press the dough mixture firmly into the bottom of a 13 x 9-inch baking pan, creating an even crust layer.
  5. Bake Crust: Bake the crust in the preheated oven for 20 minutes, until it's lightly golden.
  6. Cool Crust: Remove the pan from the oven and allow the crust to cool completely before adding the next layers.
  7. Prepare Cream Cheese Layer: In a bowl, beat the cream cheese, confectioners' sugar, and 1 cup of whipped topping together until smooth and silky.
  8. Spread Cream Cheese Layer: Evenly spread this cream cheese mixture over the cooled crust in the pan.
  9. Make Pistachio Pudding: In a separate bowl, whisk the instant pistachio pudding mixes into the 3 cups of milk vigorously for 1-2 minutes until the pudding thickens.
  10. Spread Pudding Layer: Pour and spread the pistachio pudding over the cream cheese layer evenly.
