Description

Ingredients

  • 1/4 cup vegetable oil
  • 3 large eggs

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 15x10-inch jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, vanilla extract, and purple food coloring.
  4. Combine wet and dry ingredients, stirring until the batter is smooth and lump-free.
  5. Pour the batter into the prepared pan, spread evenly, and bake for 12–15 minutes.
  6. Cool the cake for 5 minutes, then turn it out onto a powdered sugar-dusted towel and roll gently.
  7. Let the rolled cake cool completely to prevent cracks.
  8. Beat together cream cheese, butter, powdered sugar, and vanilla until fluffy to make the filling.
  9. Unroll the cooled cake, spread the filling evenly, then re-roll it tightly.
  10. Wrap the roll in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
