Ingredients
Base Ingredients
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1½ cups heavy cream
Cheese
- 1 cup freshly grated Parmesan cheese
Spices & Seasonings
- 1½ tsp Cajun seasoning (adjust to taste)
- ½ tsp smoked paprika
- ¼ tsp black pepper
- ¼ tsp salt (optional, Cajun seasoning may already be salty)
- ¼ tsp cayenne pepper (optional, for extra heat)
Instructions
- Melt the butter: In a medium saucepan over medium heat, melt the butter until it just begins to bubble, being careful not to brown it.
- Add garlic: Stir in the minced garlic and cook for 30 to 45 seconds until fragrant, making sure it doesn’t brown to avoid bitterness.
- Pour in cream: Slowly whisk in the heavy cream and bring the mixture to a gentle simmer over medium heat.
- Season it up: Add Cajun seasoning, smoked paprika, black pepper, and cayenne pepper if using. Stir well to combine all the spices evenly into the cream.
- Make it creamy: Reduce the heat to low and gradually whisk in the freshly grated Parmesan cheese a little at a time until the sauce is melted, thickened, and glossy.
- Taste & adjust: Season with salt if needed and remove the sauce from heat once it reaches your desired thickness. Adjust consistency with a splash of pasta water or milk if too thick.
Notes
- For a thinner sauce, add a splash of pasta water or milk to reach your preferred consistency.
- If the sauce is too spicy, mellow it by adding more cream or Parmesan cheese.
- Enhance flavor with a pinch of onion powder or Italian seasoning if desired.
- Use freshly grated Parmesan cheese for the best texture and smoothness.
