Description
Reese’s Peanut Butter Chocolate Chip Cookie Bites are soft, chewy mini cookie cups filled with a gooey Reese’s cup center—perfect for peanut butter and chocolate lovers.
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup creamy peanut butter
- 1/2 cup mini chocolate chips
- 24 mini Reese’s peanut butter cups, unwrapped
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan or line with mini cupcake liners.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the egg, then add vanilla extract and peanut butter, mixing until well combined.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Fold in the mini chocolate chips.
- Scoop about 1 tablespoon of dough into each mini muffin cup and press down lightly.
- Bake for 8–10 minutes or until tops are set and lightly golden.
- Immediately press a mini Reese’s cup into the center of each cookie bite after removing from oven.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Store in an airtight container for up to 4 days or freeze for up to 2 months.
- Microwave for about 10 seconds to enjoy warm.
- Try using Rolos, mini Snickers, or chopped pretzels for variations.
