Description

Reese’s Peanut Butter Chocolate Chip Cookie Bites are soft, chewy mini cookie cups filled with a gooey Reese’s cup center—perfect for peanut butter and chocolate lovers.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup creamy peanut butter
  • 1/2 cup mini chocolate chips
  • 24 mini Reese’s peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan or line with mini cupcake liners.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Beat in the egg, then add vanilla extract and peanut butter, mixing until well combined.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the mini chocolate chips.
  7. Scoop about 1 tablespoon of dough into each mini muffin cup and press down lightly.
  8. Bake for 8–10 minutes or until tops are set and lightly golden.
  9. Immediately press a mini Reese’s cup into the center of each cookie bite after removing from oven.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Store in an airtight container for up to 4 days or freeze for up to 2 months.
  • Microwave for about 10 seconds to enjoy warm.
  • Try using Rolos, mini Snickers, or chopped pretzels for variations.
