Description
A hearty one-pan meal combining smoky sausage, crispy golden potatoes, and colorful sautéed vegetables. Quick to prepare and easy to clean up, it's perfect for a comforting weeknight dinner.
Ingredients
- 1 pound smoked sausage, sliced into ½-inch pieces
- 1½ pounds baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 bell pepper, sliced (any color)
- 1 cup fresh spinach (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Parboil the potatoes in salted water for about 8–10 minutes until just tender. Drain and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook sausage slices until browned, about 4–5 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté diced onion and garlic for 2 minutes until fragrant. Add sliced bell pepper and cook for another 3–4 minutes.
- Add the parboiled potatoes along with smoked paprika, Italian seasoning, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until the potatoes are crispy and golden.
- Return the sausage to the skillet. Stir everything together and cook for another 2 minutes. Add spinach if using and let it wilt.
- Sprinkle with chopped fresh parsley and serve hot.

- Add extra vegetables like zucchini or mushrooms for variety.
- Use spicy sausage or red pepper flakes for a spicy kick.
- Top with shredded cheese for a richer dish.
- Substitute spinach with kale or arugula if desired.
