Ingredients
Meat and Vegetables
- 1 pound Ground Beef (85-90% lean)
- 1 small Yellow Onion (finely chopped)
- 2 cloves Garlic (minced)
- 0.5 head Green Cabbage (chopped)
Pantry and Seasonings
- to taste Salt
- 1 15 oz can Fire-Roasted Diced Tomatoes (undrained)
- 1 tablespoon Better Than Bouillon Beef Stock
- 2 tablespoons Tomato Paste (optional but recommended)
- 0.5 teaspoon Cumin
- 0.5 teaspoon Smoked Paprika
- Black Pepper (to taste)
- Drizzle of cooking oil (for sautéing onions and garlic)
Instructions
- Brown the Ground Beef: In a large skillet over medium heat, add the ground beef, breaking it apart as it cooks. Sauté for about 5-7 minutes until well browned. Drain any excess fat if necessary to prevent greasiness.
- Sauté Onions and Garlic: Push the beef to one side of the skillet. Add a drizzle of cooking oil if needed, then add the finely chopped onions and minced garlic with a pinch of salt. Sauté until softened and fragrant, about 3-5 minutes.
- Add Tomatoes: Stir in the fire-roasted diced tomatoes along with their juices, mixing well to blend the flavors and create a rich base.
- Season and Simmer: Sprinkle in the Better Than Bouillon beef stock, tomato paste (if using), cumin, smoked paprika, salt, and black pepper. Mix thoroughly and let the mixture simmer gently for about 5 minutes to enhance the flavors.
- Cook the Cabbage: Add the chopped cabbage to the skillet. Stir occasionally and cook until the cabbage is tender, about 15-20 minutes, ensuring it absorbs the savory flavors without becoming mushy.
- Serve: Once the cabbage is tender and all components are well combined, taste and adjust seasoning if necessary. Serve hot as a comforting main dish.
Notes
- Using 85-90% lean ground beef provides a balance of flavor and healthiness, but leaner beef may be used for less fat.
- Tomato paste is optional but adds depth and richness to the sauce.
- Adjust seasoning to your taste, especially salt and pepper.
- This dish reheats well and can be stored in the refrigerator for up to 3 days.
- For vegan or vegetarian versions, substitute ground beef with plant-based meat alternatives and use vegetable broth instead of beef stock.
