Description

This sheet pan sausage and veggie bake is a hearty one-pan dinner made with smoked sausage, potatoes, and colorful vegetables. It's an easy, customizable, and delicious meal that's perfect for busy weeknights, with minimal cleanup and maximum flavor.


Ingredients

  • 1 lb smoked sausage, sliced into coins
  • 1.5 lbs baby or gold potatoes, diced
  • 2 cups broccoli florets
  • 1 each red, yellow, and orange bell pepper, sliced
  • 1 medium yellow onion, chopped
  • 3 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss diced potatoes with half the olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper.
  3. Spread seasoned potatoes onto a baking sheet and roast for 15 minutes.
  4. Meanwhile, toss sausage, broccoli, peppers, and onion with remaining olive oil and a pinch more seasoning.
  5. Add veggies and sausage to the tray with potatoes, toss to combine, and roast for an additional 25–30 minutes, or until everything is cooked through and slightly crispy.
  6. Serve hot, straight from the pan.

Notes

  • Swap smoked sausage with kielbasa or chicken sausage for variation.
  • Sweet potatoes can be used instead of regular potatoes.
  • Add extra veggies like zucchini or mushrooms.
  • For a spicy version, use spicy sausage or sprinkle with red pepper flakes.
  • Store leftovers in an airtight container for up to 4 days. Reheat in the oven or microwave with a splash of water.
