Description
This sheet pan sausage and veggie bake is a hearty one-pan dinner made with smoked sausage, potatoes, and colorful vegetables. It's an easy, customizable, and delicious meal that's perfect for busy weeknights, with minimal cleanup and maximum flavor.
Ingredients
- 1 lb smoked sausage, sliced into coins
- 1.5 lbs baby or gold potatoes, diced
- 2 cups broccoli florets
- 1 each red, yellow, and orange bell pepper, sliced
- 1 medium yellow onion, chopped
- 3 tablespoons olive oil, divided
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss diced potatoes with half the olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper.
- Spread seasoned potatoes onto a baking sheet and roast for 15 minutes.
- Meanwhile, toss sausage, broccoli, peppers, and onion with remaining olive oil and a pinch more seasoning.
- Add veggies and sausage to the tray with potatoes, toss to combine, and roast for an additional 25–30 minutes, or until everything is cooked through and slightly crispy.
- Serve hot, straight from the pan.
Notes
- Swap smoked sausage with kielbasa or chicken sausage for variation.
- Sweet potatoes can be used instead of regular potatoes.
- Add extra veggies like zucchini or mushrooms.
- For a spicy version, use spicy sausage or sprinkle with red pepper flakes.
