Description

This classic pizza dough recipe yields a soft, chewy crust perfect for homemade pizzas. Using bread flour enhances the chewiness, but all-purpose flour works well too. The dough is easy to prepare with simple ingredients, requiring just mixing, kneading, and rising time before shaping the dough into your favorite pizza base.

Ingredients

Dry Ingredients

  • 2 and 1/2 cups (300 g/10.5 oz) bread flour, sifted (or all-purpose flour)
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon instant dry yeast

Wet Ingredients

  • 3/4 cup plus 1 tablespoon (195 ml) warm water
  • Olive Oil (for greasing)

Instructions

  1. Combine ingredients: Place the flour, yeast, sugar, and salt in the bowl of a standing mixer and mix until evenly combined. Attach the dough hook to the mixer.
  2. Add water and mix: Add the warm water to the flour mixture and mix on low speed for 2-3 minutes until the dough starts to come together.
  3. Knead the dough: Continue mixing on low-medium speed for about 7 minutes, until the dough is completely smooth, elastic, and pulls away from the sides of the bowl. The dough should be slightly sticky; adjust by adding flour or water sparingly if needed.
  4. First rise: Transfer the dough to a large bowl brushed with olive oil and toss to coat it completely to prevent drying. Cover with plastic wrap and let it rise in a warm spot for 1-2 hours or until doubled in size. Alternatively, refrigerate overnight or up to 24 hours, allowing dough to rest at room temperature for 30-60 minutes before using.
  5. Punch down the dough: After the dough has risen, gently punch it down to release trapped air. The dough is now ready to be shaped for your pizza base.
  6. Proceed with pizza making: Shape the dough as desired and top it with your favorite ingredients to bake your homemade pizza.

Notes

  • Use bread flour for a chewier texture; all-purpose flour will produce a softer crust.
  • Ensure water is warm (around 100-110°F or 38-43°C) but not hot to effectively activate yeast without killing it.
  • If dough feels too sticky, add flour one tablespoon at a time; if too dry, add a little more water.
  • Olive oil is used to coat the bowl to prevent dough from drying out during rising.
  • For best flavor and texture, allowing the dough to ferment slowly in the refrigerator overnight is recommended.
