Description

A quick and flavorful skillet dish combining juicy chicken, barbecue sauce, and melted cheese, topped with fresh tomatoes and green onions.


Ingredients

  • 4 boneless skinless chicken breasts
  • ½ cup chicken stock
  • 4 tablespoons barbecue sauce
  • 4 ounces Colby Jack cheese, shredded
  • 1 tomato, diced
  • 2 green onions, sliced
  • Salt and pepper (optional)

Instructions

  1. Pound chicken breasts to desired thickness and season with salt and pepper if desired.
  2. Heat a large skillet over medium-high heat and brown chicken on both sides (2–3 minutes per side).
  3. Pour chicken broth over the chicken, cover skillet, and cook until chicken is done (about 4–5 minutes, depending on thickness).
  4. Turn off heat and spread barbecue sauce on top of each chicken breast.
  5. Divide shredded cheese evenly over the chicken.
  6. Place under the broiler for 30 seconds to 1 minute until cheese is melted.
  7. Top with diced tomato and sliced green onions. Serve immediately.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To freeze, remove tomato and green onion garnish, place leftovers in an airtight freezer bag, and freeze for up to 3 months. Defrost overnight and reheat in oven or skillet.
