Simple drop sugar cookies that are soft, slightly chewy, and easy to make
Ingredients
- 2 ¾ cups all‑purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon fine salt
- 1 cup unsalted butter, room temperature
- 1 ½ cups granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- Optional: extra sugar for rolling
Instructions
- Preheat the oven to 350 °F (175 °C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, beat the butter and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract, and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined (do not overmix).
- Form dough into balls (about 1 to 2 tablespoons each). Optionally roll each ball in extra sugar.
- Place balls on prepared baking sheets about 2 inches apart.
- Bake for about 8–10 minutes, or until the edges are lightly golden but centers are still soft.
- Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overbake — cookies will continue to set as they cool.
- If dough is too soft, chill for 10–15 minutes before baking.
- Store in an airtight container to keep them soft.
- You can add sprinkles, colored sugar, or frost after cooling if desired.
