Description

This creamy and flavorful Spinach Dip is a quick and easy appetizer perfect for any occasion. Made with fresh or thawed spinach blended into a smooth cottage cheese and mayonnaise base, it offers a deliciously healthy twist on classic dips. Ready in just 10 minutes, this dip is versatile to serve immediately with bread, croutons, or crackers, or to refrigerate for later.

Ingredients

Spinach

  • 9 oz. (250 g) fresh spinach (or thawed frozen spinach)

Dip Base

  • 1 ½ cup (330 g) cottage cheese
  • 2 tbsp mayonnaise

Seasonings

  • 1 tsp onion powder
  • ½ to 1 tsp garlic powder (to taste)
  • ½ tsp kosher salt (more to taste)
  • Ground black pepper (to taste)

Instructions

  1. Prepare spinach: Steam, cook, or sauté the spinach until wilted and tender. Allow it to cool completely, then squeeze out all excess water to prevent the dip from becoming watery. Finely chop the spinach for even distribution in the dip. If using frozen spinach, thaw it fully, then drain any liquid and chop it finely.
  2. Make cream base: In a high-speed blender or food processor, combine the cottage cheese, mayonnaise, onion powder, garlic powder, kosher salt, and ground black pepper. Blend on high speed until the mixture is smooth and creamy. Taste and adjust the seasonings as needed for your preferred flavor balance.
  3. Mix together: Transfer the smooth cream base to a bowl, then add the chopped spinach. Gently stir the ingredients together until fully combined, ensuring the spinach is evenly distributed throughout the dip.
  4. Serve or store: Serve the spinach dip immediately alongside bread, croutons, or crackers for dipping. Alternatively, place the dip in an airtight container and refrigerate. Consume within 3 days for the best freshness and flavor.

Notes

  • Be sure to squeeze out all excess water from the spinach to avoid a watery dip.
  • Adjust garlic powder and salt according to your taste preference.
  • This dip can be prepared several hours in advance and chilled to meld flavors.
  • Use fresh spinach for the best flavor, but frozen spinach works well if properly thawed and drained.
  • Serve chilled or at room temperature depending on preference.
