Ingredients
- 1 lb ground beef
- 1 cup fresh spinach, chopped
- 3 cloves garlic, minced
- ½ small onion, finely chopped
- 1 large egg
- ½ cup breadcrumbs
- 1 tsp Italian seasoning
- ¼ tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
- 4 oz mozzarella cheese, cut into small cubes
- 1 tbsp olive oil (for brushing)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, spinach, garlic, onion, egg, breadcrumbs, Italian seasoning, red pepper flakes, salt, and pepper. Mix until just combined.
- Scoop and flatten a portion of the meat mixture in your hand, place a mozzarella cube in the center, and wrap the meat around it to form a ball.
- Repeat with remaining mixture. Arrange meatballs on the prepared baking sheet.
- Brush meatballs lightly with olive oil. Bake for 20–25 minutes, or until golden brown and cooked through.
- Garnish with fresh parsley and serve warm.
