This no-bake treat offers a perfect balance of salty and sweet flavors with a refreshing fruity finish, making it an ideal dessert for gatherings or special occasions.
Ingredients
Crust
- 2½ cups crushed pretzels (from about 5 cups whole pretzels)
- ¾ cup butter, melted
- ¾ cup sugar (half of the 1½ cups)
Cheesecake Layer
- 12 ounces cream cheese, softened
- 2 teaspoons vanilla extract
- ¾ cup sugar (remaining half of the 1½ cups)
- 12 ounces Cool Whip
Strawberry Gelatin Layer
- 6 ounces strawberry gelatin (2 packages)
- 2 cups boiling water
- 3 to 4 cups fresh strawberries, sliced
Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed pretzels, melted butter, and ¾ cup sugar until the mixture is well blended. Press this mixture firmly into the bottom of a 9x13-inch baking dish to form an even crust. Bake for 10 minutes, then remove from the oven and allow it to cool completely.
- Make the Cheesecake Layer: In a large bowl, beat the softened cream cheese with the remaining ¾ cup sugar and vanilla extract until smooth and creamy. Gently fold in the Cool Whip until the mixture is light and fluffy. Spread this cheesecake mixture evenly over the cooled pretzel crust, smoothing the top with a spatula.
- Prepare the Strawberry Gelatin: Dissolve the strawberry gelatin packets in 2 cups boiling water, stirring until completely dissolved. Allow the gelatin to cool slightly but not set.
- Add Strawberries and Gelatin Layer: Arrange the sliced fresh strawberries evenly over the cheesecake layer. Carefully pour the slightly cooled gelatin over the strawberries and cheesecake layer, making sure the berries stay evenly distributed.
- Chill and Set: Refrigerate the assembled dessert for at least 4 hours, or until the gelatin is fully set. For best results, chill overnight to allow the flavors to meld and the layers to firm up completely.
- Serve: Once set, slice into squares and serve chilled. This dessert pairs wonderfully with a dollop of fresh whipped cream if desired.
Notes
- Make sure the pretzel crust has cooled completely before adding the cheesecake layer to prevent melting.
- If fresh strawberries are not available, frozen berries can be used but thaw and drain excess liquid before layering.
- For a sweeter or tangier balance, adjust the amount of sugar or substitute half the cream cheese with Greek yogurt.
- This dessert should be kept refrigerated and consumed within 3 days for optimal freshness.
- To crush pretzels, place them in a sealed plastic bag and use a rolling pin or heavy pan.
