Description

These Strawberry Yogurt Clusters are a delightful and healthy treat that combine fresh strawberries and creamy Greek yogurt, coated in rich melted chocolate. Perfect as a refreshing snack or dessert, they're easy to make and freeze solid for a quick, satisfying bite.

Ingredients

Yogurt Mixture

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup semi sweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Prepare the Yogurt Mixture: In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Combine them thoroughly until the mixture is well blended.
  2. Form the Clusters: Using scoops about 2 tablespoons each, place the yogurt mixture onto a parchment paper-lined baking sheet or a large plate to form approximately 10 clusters.
  3. Freeze the Clusters: Place the baking sheet with the clusters into the freezer and freeze until they are completely solid, about 1 to 2 hours.
  4. Melt the Chocolate: Add the semi sweet chocolate chips and coconut oil into a microwave-safe bowl. Microwave in 15 to 30-second intervals, stirring between intervals until the chocolate is fully melted and smooth.
  5. Coat the Clusters: Remove the frozen clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate, ensuring they are thoroughly coated. Place the coated clusters back onto the prepared baking sheet. Optionally, sprinkle with sea salt for added flavor.
  6. Harden the Chocolate: Return the coated clusters to the freezer for a few minutes to allow the chocolate coating to harden and the yogurt to firm up.
  7. Serve and Enjoy: Once the chocolate is set, your strawberry yogurt clusters are ready to be enjoyed as a refreshing, sweet treat.

Notes

  • Make sure the yogurt mixture is well chilled before dipping to prevent the chocolate from melting too quickly.
  • Use parchment paper to avoid clusters sticking to the pan.
  • Substitute honey with maple syrup or agave for a vegan-friendly option.
  • Adjust the sweetness by varying the amount of honey.
  • Store leftovers in an airtight container in the freezer to maintain freshness.
