Description

A refreshing summer peach fruit salad featuring ripe yellow peaches, fresh blackberries, blueberries, and pomegranate seeds, lightly tossed with honey, lime juice, and fragrant basil ribbons. Perfect as a vibrant, healthy side dish for barbecues, picnics, or any warm-weather gathering.


Ingredients

Fruit

  • 4 large ripe (but not too ripe) yellow peaches, sliced
  • 1 cup blackberries
  • ¾ cup blueberries
  • Seeds from 1 medium pomegranate

Herbs & Dressing

  • 6 large basil leaves, cut into ribbons
  • 1-2 teaspoons honey
  • ½ lime, juiced


Instructions

  1. Prepare the fruit: Wash and slice the 4 large yellow peaches, making sure they are ripe but firm. Rinse the blackberries and blueberries and drain well. Remove seeds from the pomegranate.
  2. Combine ingredients: In a large bowl, add the sliced peaches, blackberries, blueberries, pomegranate seeds, and basil ribbons, ensuring even distribution.
  3. Add dressing: Drizzle 1-2 teaspoons of honey and the juice of half a lime over the fruit mixture.
  4. Toss salad: Gently toss the salad using tongs to coat the fruit evenly with the honey-lime dressing and incorporate the basil.
  5. Serve or store: Serve immediately or refrigerate in an airtight container for 2-4 days. For best basil color and freshness, add basil ribbons just before serving if preparing in advance.

  • You can prepare the salad a day in advance, but add basil last to preserve its bright green color.
