- 4 large ripe (but not too ripe) yellow peaches, sliced
- 1 cup blackberries
- ¾ cup blueberries
- Seeds from 1 medium pomegranate
Herbs & Dressing
- 6 large basil leaves, cut into ribbons
- 1-2 teaspoons honey
- ½ lime, juiced
Instructions
- Prepare the fruit: Wash and slice the 4 large yellow peaches, making sure they are ripe but firm. Rinse the blackberries and blueberries and drain well. Remove seeds from the pomegranate.
- Combine ingredients: In a large bowl, add the sliced peaches, blackberries, blueberries, pomegranate seeds, and basil ribbons, ensuring even distribution.
- Add dressing: Drizzle 1-2 teaspoons of honey and the juice of half a lime over the fruit mixture.
- Toss salad: Gently toss the salad using tongs to coat the fruit evenly with the honey-lime dressing and incorporate the basil.
- Serve or store: Serve immediately or refrigerate in an airtight container for 2-4 days. For best basil color and freshness, add basil ribbons just before serving if preparing in advance.

- You can prepare the salad a day in advance, but add basil last to preserve its bright green color.
