Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the cobbler.
- Macerate the strawberries: In a large bowl, mix the hulled and halved strawberries with 1/3 cup of sugar. Let them sit to release their natural juices, enhancing their sweetness and flavor.
- Melt the butter: Place the unsalted butter in a 13x9-inch baking dish and put it in the oven until fully melted, approximately 10 minutes.
- Prepare the batter: In a medium bowl, whisk together flour, baking powder, kosher salt, and the remaining 2/3 cup sugar. Add milk and vanilla extract, stirring just until combined to keep the batter light and tender.
- Assemble the cobbler: Carefully remove the baking dish with melted butter from the oven. Pour the batter evenly over the melted butter—this will create a buttery base. Spoon the macerated strawberries over the batter, discarding any excess liquid left in the strawberry bowl to prevent sogginess.
- Bake: Return the dish to the oven and bake for 55 to 60 minutes, or until the batter on top is golden brown and you see the strawberry juices bubbling around the edges.
