Description

Caramelised Soy Chicken in Garlic Ginger Broth with Rice is a cozy, flavorful dish featuring juicy chicken thighs glazed in sweet soy and simmered in a fragrant garlic-ginger broth, served over fluffy rice.


Ingredients

  • 4 chicken thighs (skin-on, bone-in)
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 cups chicken broth
  • 2 cups cooked rice (jasmine or basmati)
  • 2 tablespoons neutral oil (vegetable or canola)
  • 2 green onions, chopped (optional, for garnish)

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat oil in a pan over medium-high heat and sear chicken thighs skin-side down until golden and crisp.
  3. Flip the chicken and add soy sauce and brown sugar. Simmer until the chicken is glazed and caramelised.
  4. Add minced garlic and ginger, stir to release aroma and flavor.
  5. Pour in chicken broth and simmer gently until the chicken is cooked through and tender (about 25–30 minutes).
  6. Meanwhile, cook the rice separately.
  7. To serve, place rice in bowls, top with chicken and ladle over garlic-ginger broth.
  8. Garnish with chopped green onions if desired.
