A creamy, sweet, and crunchy chicken salad featuring tender chicken, crisp apples and celery, juicy grapes, and pecans, all tossed in a zesty lemon mayo dressing.
Ingredients
- 1 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon kosher salt (or to taste)
- ½ teaspoon freshly ground pepper (or to taste)
- 4 cups cooked, diced chicken
- 1 cup seedless red grapes, halved or quartered
- 1 cup red apple, chopped
- 1 cup celery ribs, chopped (about 2 stalks)
- 1 cup pecans (or walnuts/almonds), chopped or sliced
- Bread, croissants, lettuce cups, pita or crackers (for serving)
Instructions
- In a medium bowl, whisk together mayonnaise, lemon juice, parsley, salt, and pepper until smooth and creamy.
- In another bowl, toss the diced chicken, grapes, apple, celery, and pecans.
- Drizzle the dressing over the salad ingredients and stir until everything is evenly coated.
- Cover the bowl and chill for at least 1 hour before serving to let the flavors meld.
- Serve on bread, croissants, wraps, in lettuce cups, or with crackers.
Notes
- Can substitute Greek yogurt for half the mayo for a tangier twist.
- Raisins or craisins can be used instead of grapes.
- Celery seeds are a good substitute for fresh celery.
- Try different apples like Fuji, Gala, or Honeycrisp.
