Ingredients
Cookie Dough
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
Filling
- ½ cup brown sugar, packed
- 2 tsp ground cinnamon
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the cookies evenly and to golden perfection.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon. This ensures the leavening and spices are evenly distributed throughout the dough.
- Cream Butter and Sugars: In a separate large bowl, beat the softened unsalted butter with both the granulated and brown sugars until the mixture is light and fluffy, which helps give the cookies a tender texture.
- Add Egg and Vanilla: Beat the egg and vanilla extract into the creamed butter mixture until smooth and fully incorporated, contributing moisture and flavor to the dough.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients and mix just until combined, making sure not to overwork the dough for tender cookies.
- Prepare Filling: In a small bowl, combine the brown sugar and ground cinnamon for the cinnamon filling that brings the iconic flavor to these cookies.
- Assemble Dough Roll: Spread half of the cookie dough onto a piece of parchment paper forming a rectangle. Evenly sprinkle the cinnamon sugar filling over it, then carefully roll the dough tightly into a log shape using the parchment to help lift and roll.
- Slice Cookies: Using a sharp knife, slice the rolled dough log into rounds approximately ½ inch thick and place them spaced on a baking sheet lined with parchment paper.
- Bake: Bake the cookies in the preheated oven for 10-12 minutes or until they turn a light golden brown around the edges. Remove from oven and allow to cool slightly before serving.
Notes
- Make sure the butter is softened to room temperature for easier creaming with sugars.
- Do not overmix the dough once the dry ingredients are added to prevent tough cookies.
- Use sharp knife or dental floss to slice the dough log cleanly without squashing the cookies.
- These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for 3-4 days.
- Optional: Drizzle with cream cheese glaze for an extra decadent treat.
