Description

These Coconut Toffee Chocolate Chip Cookie Bars are rich, chewy dessert bars packed with sweet coconut, crunchy toffee, and melty chocolate chips. Easy to make and perfect for gatherings or gifting.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup toffee bits
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper or grease it lightly.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the butter with both sugars until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Gradually stir in the dry ingredients until just combined.
  6. Fold in the shredded coconut, toffee bits, and chocolate chips.
  7. Spread the dough evenly into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the bars cool completely before cutting into squares.
